What sink to choose with granite worktop?

We’ve chosen the granite, but can’t decide about what type of sink to go for - undermount or overmount, i.e. stainless steel. I do a lot of cooking and am worried that if I choose an undermount double bowl sink (one side for washing and another bowl for draining) that the granite edges will become scuffed.
