The tile/grout edge behind my kitchen sink is turning slight black and loosening the caulk?

because everytime I use the sink, when I turn the faucet off the water from my hands slides down to the back of the sink and kind of lays there. How can I prevent this from happening. Is there something I can put between the back of the kitchen sink and the tiled wall ? Please help !
