Can “Apron front” kitchen sinks be covered with a wood panel?

I am starting my kitchen remodel and I am hunting for a GREAT sink: it has to be a single basin, oversized and undermounted. I love the size and shape of “apron front” sinks, but I do not want the front of the sink exposed, I would prefer to not see it at all (also why I want a undermounted sink) But I cannot find any sinks that have all three of those together that are not “Apron front” (where you see the front of the sink).

Have you seen this done before or do you have any advice?
I just love the large rectangle sink, but I do not want to have the “front” of my sink on display… does anyone have a good website that sells these or any ideas what I can do?
Thanks!
